This one’s great when you want something simple and filling that works hot or cold.
What you’ll need:
1 cup sourdough discard
2 cups grated zucchini (squeeze water out)
1 cup grated cheese
1 small onion, finely chopped
3 eggs
1 cup plain flour
1 teaspoon baking powder
½ teaspoon salt
How to make it:
Mix everything together, spread into a greased baking dish and bake at 180°C for about 35–40 minutes until golden and set. Its that simple.
