Yep — proper crunchy onion rings using discard in the batter. These disappear fast.
What you’ll need:
1 cup sourdough discard
½ cup plain flour
½ teaspoon salt
¼ teaspoon pepper
½ teaspoon paprika (optional)
1 large onion, sliced into rings
Oil for frying
How to make them:
Mix discard, flour, salt, pepper and paprika into a thick batter. Dip onion rings into the batter and fry in hot oil until golden and crispy. Drain on paper towel and sprinkle with salt.
Little tips from me to you:
Serve with burger sauce or sweet chilli. You can use the same batter for zucchini or mushrooms too.
